Chef Javier Bonet launched his original culinary proposal back in 2013 at his first establishment located on the popular Calle Ponzano, paying homage to the traditional tapas of Chamberí, with seasonal offerings displayed along a bar where diners were seated. In 2024, the restaurant moved to its current premises at No. 28 Calle Alonso Cano, also in Chamberí, remaining true to its original spirit and philosophy.
The new larger restaurant can accommodate up to 60 diners seated at the bar or at a table. It retains the popular décor of the original premises, made to look like a traditional butcher’s room, with white as the predominant colour. The menu presents surprising and original dishes with the finest vegetable, fish and meat ingredients. It has an extensive wine list which includes white wines, rosé wine and Japanese sake.
Sala de Despiece has two other restaurants: Sala de Despiece 0, at No. 27, Calle Ayala (Barrio de Salamanca neighbourhood), and Sala de Despiece 2, at No. 8, Calle Virgen de los Peligros, near Puerta del Sol.
