The new restaurant by the chef Javier Bonet (the man behind the successful Sala de Despiece), opened at the start of summer 2024, is located in the heart of the Salamanca neighbourhood. The space, where 45 diners are seated at a bar around the kitchen, is an interactive project that moves away from the familiar gastronomic experiences, where clients can modify their dishes.
The decor of the establishment, which is divided over two floors, with materials such as steel and cement, reminiscent of a slaughterhouses, like at Sala de Despiece. The ground floor has a cocktail bar, run by Amarguería and Juan Valls, and a club, where you can stay until the early hours, with DJ music and where there are vending machines to buy beers, long drinks or shots.
Secrecy surrounds the whole project, with a menu that is totally unknown to diners until they sit at the bar, which is L-shaped, but in which local produce (beef from Avila) will be a key element. The management requests that no photographs of the dishes are uploaded to social media in order to preserve this mystery for future diners, who will be able to keep their mobile phones in a plastic bag.
