The chefs Óscar Velasco and Montse Abellá, both from the now defunct Santceloni, launched their new restaurant in the neighbourhood of Hispanoamérica in Chamartín in June 2023, showing off their culinary talents with timeless dishes that avoid passing trends, made using seasonal, market-fresh ingredients, awarded a Michelin star in the 2025 edition.
The bright and airy restaurant is spread over 380 m2 and two floors, accommodating around 70 people. It has several different spaces, including a bar with stools where booking is not required, an area for seated dining, a large dining room with an open kitchen, and a private area on the ground floor with its own kitchen, called "The Apartment" which can also be used for courses, tastings, presentations or any other kind of event.
The décor makes use of light wood, stone and whitewashed walls, reminiscent of Mediterranean villages.
The menu includes around twenty savoury dishes and 4 or 5 desserts, as well as a tasting menu that can be tailored to the diner.
Velasco and Abellá are both highly regarded chefs, having earned between them 2 Michelin stars and 3 Repsol suns at Santceloni. Montse Abellá has also been awarded the Torreblanca Award for Best Pastry Chef (2016) and the Grand Prix au Chef Pâtissier (2019) by the International Academy of Gastronomy, and Óscar Velasco has received the National Gastronomy Award for Best Head Chef (2007) awarded by the Royal Spanish Academy of Gastronomy, the Chef l’Avenir Award (2016) presented by the International Academy of Gastronomy, and has also been named Chef of the Year at the Madrid Fusion Congress (2006).
