Varra

Next to Plaza de Colón, in the Barrio de Salamanca neighbourhood, chefs Joaquín Serrano and Jorge Velasco run this cosy restaurant that transcends time and tradition to redefine the essence of Spanish cuisine and the traditional Spanish bar. Combining a restaurant and bar, it pays tribute to the best authentic local cuisine and has been named a Bib Gourmand restaurant in the 2025 Michelin Guide.

Varra is spread over two floors. On the ground floor, at street level, there is a renovated bar area that combines tradition and innovation. Here they serve classic dishes alongside others that are hard to find these days. On the top floor, you’ll find Restaurante Varra, the most personal culinary concept devised by chefs Serrano and Velasco, a space that showcases seasonal ingredients.

The menu is based on the utmost respect for ingredients and the seasons.
