This charming restaurant in Valdemorillo, which plays with a simultaneously rustic and modern aesthetic, has been awarded a star in the 2025 Michelin Guide. Manu Franco, its chef-owner and former sports journalist, favours all the flavours of the Sierra de Guadarrama, local meats, aromatic plants that grow in the area (such as thyme or the digestif liqueur cantueso) and home grown vegetables.
The restaurant has a fixed lunch menu on weekdays (Wednesday to Friday, plus Friday and Saturday dinners) that evolves with the seasons (Little Autumn, Little Winter...) and another more complete and modern tasting menu, available in either a short and long format (Close your eyes and Close your eyes XL).
